If you taste Monte Enebro, you are simply amazed by its unique flavor, shape, texture and appearance. Next thing that comes to your mind: Who is that genius that invented such a cheese?!?
On my last trip to Spain then, Guillermo and I could arrange a meeting with the cheese maker Rafael Baez and his daughter Paloma in person. We learned Rafael’s phenomenal story:
He retired as an executive engineer from his career that builds motors for large vessels. At the same time his daughter started a gourmet store in Madrid. He wanted to make himself useful and she said: Why don’t you make a cheese I can sell?
Long story short, Rafael who has never made cheese in his life retreated into his summer house some 50 miles from Madrid and started to research with precision and a scientific motivation like only somebody with an engineering background could do it. He consulted with some of the most influential cheese makers.
And sure enough, a few years later he was awarded for the Monte Enebro with some of the most recognized cheese awards, received great international attention, is listed and reviewed in any relevant cheese guide and his summer house has become the mecca forcheese lovers from all over the world.
It is simply very inspiring to listen to this story! He truly created a piece of art with this Monte Enebro. Luckily we are able to enjoy it over and over again.
Even Rafael Baez feels the magic moment. He sits at his modest office desk, leand back and says: “I believe in wonders. And what happened to me with Monte Enebro is one!” After that he pulls out a photo album with copies of all the press articles and pictures from professional food photographers that were send from international newspapers.
